My family and I love eating Mexican food and this Sour Cream Chicken Enchilada dish is a favorite!  It is simple to make for your own family or to bring to a friend’s house who might have just had a baby!  I prefer to make this with a rotisserie chicken I have picked up at the grocery store, but feel free to cook your own chicken and use with this as well.Click here for my delicious recipe for homemade queso dip to go with these enchiladas! Every summer, the Fourth of July makes me think of fireworks, bar-b-que, and banana pudding! This year we are celebrating with our neighbors, and of course, I volunteered to bring the dessert! I normally use a recipe that was passed down from my great grandmother for how she made her yummy banana pudding. Recently my husband came across an online article of an Irish island, Arranmore, that is looking for residents from America and Australia to move to their island. This farming and fishing community’s population has been slowing decreasing because residents are leaving to pursue other careers in more modern cities. They are hoping to interest those that are able to work remotely. I have to admit, I was intrigued.
