My husband and I have eaten and tried our fair share of cheese dips in our 16+ years of marriage.  We of course have our favorites, and over time, we have tried our hand at re-creating those favorites in our own kitchen.  Attempting to replicate cheese dips has proven to not be as easy as we thought, but after lots of attempts and patience, we have come up with right combination of ingredients.  After we perfected our own recipe, this cheese dip is not only a favorite that we like to enjoy, but this cheese dip is requested by our friends and family when they come over and Mexican food is on the menu!  Click here for the Sour Cream Chicken Enchilada recipe we love to make when we are having queso!

The other thing I have learned along the way, is the key to melting cheese over your stove top, is slow and steady wins the race!  If you get your saucepan too hot, your cheese will not properly break down and melt smooth.  So keep this in mind if you attempt this recipe and know that it has taken me awhile to perfect this myself.

Speaking of cheese, the cheese we use to make our cheese dip, is a mixture of deli sliced White American Cheese and Yellow American Cheese that I get sliced at the Deli at the grocery store.  Using the cheese you can get sliced at your local deli is important versus buying pre-sliced in the dairy section.  The serving size for the ingredients listed below will feed 4-6 people, however, if you need to feed more than that, you can increase the amount of cheese you use, just make sure you use more White American Cheese than Yellow American Cheese.

Ingredients:

1/4 Cup of Milk

7 Slices of White American Cheese

5 Slices of Yellow American Cheese

2-3 Generous Tablespoons of Sour Cream

2 Tablespoons of Pico de Gallo

 

Directions:

Add all of the ingredients listed above to a medium saucepan (tear the cheese slices apart to make them smaller pieces) and then turn on the heat to your stove top to low heat.

Keep your heat low the entire time and continuously stir until the cheese is completely melted.  This can take about 20-30 minutes

After cheese is all melted, pour into a bowl and serve
